Tried this for the first time today and it was awesome. Absolutely the best, most tender squirrel I've ever had!
Brine: 2 C of water 3/4 C of kosher salt (not table salt) 1 C of brown sugar 2 tbsp of vinegar (cider works best) 1 tbsp onion powder (optional) 1 tbsp garlic powder (optional) 6-8 cups of ice
In a small saucepan add 2 cups of water and bring to a boil. Add salt, sugar, vinegar, onion and garlic powders. Stir together until dissolved. Put ice in a small pitcher and pour the brine over and stir until cooled. Place squirrel parts and cooled brine into a large zip-lock bag and completely fill with cool tap water. Refrigerate for 2-3 hours (no more than 3). Remove and rinse with cool water to stop the brining process. Prepare squirrel your favorite way and enjoy.
