I'm always dabbling in the kitchen with wild game, and tried this one over the weekend. Needless to say I have another batch in the slow cooker today. Ingredients: Two quartered rabbits 1/4 cup hot sauce ( I use franks red hot sauce) 1/4 cup bbq sauce Few dashes of Terriaki or soy sauce 1/4 cup apple cider vinegar 1 can low sodium chicken stock 1 box Zatarans jumbalaya flavored rice 1/2 tbl. butter 1 tbl. olive oil 1/4 tsp. garlic powder 1/4 tsp. onion powder 1/4 tsp. dry mustard 1/4 tsp. cayenne pepper 1/4 tsp. salt 1/2-3/4 tsp. black pepper ( I prefer mine "warm") 1/4 tsp. white pepper 1/4 tsp. chili powder. Mix all the dry ingredients together. Coat rabbit pieces with olive oil and melted butter. Toss in a bowl with all the dry ingredients until well coated. Broil in oven for 5-8 minutes until brown/crusted, flip and repeat on the other side. Mix hot sauce, bbq sauce, terriakia, vinegar and chicken stock together in slow cooker. Turn on low setting. Once rabbit is removed from broiler, put in slow cooker for 4-6 hours (will depend on temperature). When rabbit is fork tender, add rice kit and cook another hour. Add chicken stock or water as needed to ensure rice is done. Meat should be falling off the bone when removed. This has a GREAT cajun/ hot wing flavor and you can crank up the heat as much as you want. The rice soaks up all the good flavors too! Come game time tonight, I'll have a big ole bowl of this, a few frozen mug drafts, and I'll be all set!
