I cooked up a 12# coon Saturday for my annual wild-game fry, I had never cooked coon before, and it turned out really great. Everyone said it tasted like beef roast. Even women liked it!
1 coon, cut into serving sized pieces 1 lb sauerkraut 2 apples, chopped 1 large onion, chopped 2 beers, or 24oz apple cider or juice salt/pepper to taste 1 Tbsp Caraway Seeds
Defat the the coon as good as possible. Boil in a covered pot for 1.5 hours with seasonings. You may want to open a window because this part can get a little gamey! Saute, in butter, the onion and apple. When they are soft add sauerkraut and beer or juice. Simmer until juice is gone. Place coon pieces in a caserole dish and cover with kraut. Cover dish and bake 3 hours, or until coon is tender. Serve with fresh biscuits and mashed potatoes.
If you are a coon hunter or trapper, you must try this dish!

Lego of my gumbo! That was the Duck Commanders' recipe; I just substituted tree vermin for mallard!
