This is atradition I started a few years ago, tastes great. The recipe uses Tenderloin or back strap section that I leave together- about a foot long. Marinate meat in olive oil and red wine or basalmic vinegar. To the mix add cajun spice mix, garlic, pepper- lots of black pepper, and a dash or two of hot sauce. Marinate for one afternoon. Grill until medium rare. Also add a cut up greeen pepper and onion in aluminum foil to the grill with a dash of garlic salt and some ollive oil to keep from burning.
while everything is grilling, take a loaf of french or italian bread (The french bread surrenders quicker than the Italian- which switches sides half way through the sandwich)...... slice the top like you work at subway- cut into it at an angle across the top. Cut meat into small chunks or slices. add peppers and onions. Also add swiss or provalone cheese. I usually add some steak sauce to the sandwich. Best eaten warm. Feeds one father and son hunting duo for an entire game!
