I took my father to Lost River Game Farm last weekend as a Christmas present and we had really good luck. I've never cooked pheasant before so does anyone have any pheasant recipes or cooking tips you are willing to share?

Thanks for the link, I'll have to kill some more pheasants to try all of those recipes! Hey, now that I think about that idea, it sounds even better.

mobogo, if you like turkey and dressing then just substitute the turkey with pheasants. we used to take three pheasants and stuff them with our favorite dressing recipe. they sure where good. h.h.

Pheasant, onions, carrots, & bar-b-que sauce slow-cooked in crock pot. Fixed some this weekend.

fill bottom of roasting dish with water or white wine. rinse body cavity of pheasant. Fillwith onions, carrots, celery, and slices of lemon, salt and pepper. Cook breast DOWN.. On the back of the bird. set as many pats of butter as will fit. on top of butter- slat and pepper, add some garlic cloves. line top of bird with more lemon slices. Around bird- in bottom of roasting pan, fill with peeled potatoes, any left over carrots, celery and lemon slices. Roast at 350. leave in oven for about 25 minutes. Checking doneness about every 5 minutes after that. Once finished, carve bird, serve with veggies from the pan(I usually discard the ones from the cavity). drippings can be heated with flour and butter added to make a gravy.
