Does anyone have a Jalapeno & Cheese summer sausage recipe that they would be willing to share? I have heard too much about this to not give it a try this year. Thanks in advance!!

We just drain the jalapenos well, chop them a little and add as much as we want. As far as cheese you need to buy hi-temp cheese so it holds it's shape. We buy ours at a local butcher.

buy a summer sausage seasoning from a supplier/butcher, grind your deer once with pre ground beef fat (i use exactly 10 percent) mix in seasoning real good and make sure their are no "fat pockets" then mix in peppers and cheese i make 25lb batches with one full jar of gordons food service peppers and 2.5 lb of hi temp cheese. (i also make a awesome deer pastrami with hi temp pepper jack chhese)

i use a air oven, and slow cook it like it should be, but i have a small smoker (does 10-15 lbs at a time )it works pretty good, it is for sell.

yea kinda, it has a element and a fan that blows across it to heat the oven.
