I've ate them before. Love fishing for them, but they weren't prepared the best. Going to try again this year when I can catch some.

Ate a lot of them as a kid we'd just head to the creek with the bow shoot one and clean it and let it soak a day in salt water brine the cut it up in big chunks and deep fry it. A cheap meal and not bad tasting, diffently better then crow.

Tried it once. A 1 1/2 pounder caught early in the spring. Still tasted like CRAP! I filleted and cut out the boneless strips and fried it. I think that is why carp and crap have the same letters in them.
Now they are filleted and chunked to use for catfish bait.

Now I'll tell you why I asked. Ive eaten carp a lot and the way I fix it the meat tastes like tuna fish. I pressure can it. Its very easy to do. Fillet the carp and cut the center line out of the fillets. Cut about 1/8" on both sides of the center line. What this does is take out the mud taste. If you look you will see a round white vein right in the middle of the fillet under the center line. This white vein is where the nasty taste is. Take the fillets and cut them up into chunks and put into pint jars up about 1" from the top. Add 1/2 tsp of salt, a small slice of onion and pressure can for 100 minutes 10 lbs. The meat is darker than tuna but the taste is almost the same. Another thing is in the spring take the egg sacks out of the female carp and fry them in the sack with salt and pepper. They make a great sandwich. Now I'm sure some of you will turn up your nose but believe me a carp is very good eating if prepared right.... h.h.

Carp is just about the only freshwater fish that I have never tried. I would try it though just never had the chance. I have heard that these asian big head carp are good to eat. I caught one at Lagro today but left it for the coons. After seeing these fish in action on some videos I wasn't happy to see them in the Wabash watershed. Kill em all.

My grandma use to pressure cook them and boy were they good. Everything she cooked was great. Never had anything better then her squirl that she would fry up.
