I found an interesting corn beef recipe. Need to talk to the butcher to see if I can get beef trimmings like they use in this video. Plan to use at least 50% venison with the trimmings. Check it out.

Picked up 5 lb of trimmings after work. Mixed about 1.5 lb each of venison and trimmings and added pickling salt and curing salt. Will finish Thursday evening and give it a try on Friday after it sets up.

Got a great deal on the trimmings - 50 cents a pound, and it actually looked like pretty good stew meat.
