Here’s a little snack we make up every few weeks. I cooked two pounds of thick cut bacon on the pellet grill and then used about half or so to make these little cream cheese pickle bites. I used two packs of cream cheese, diced up five pickle spears, added onion powder, season salt, and a little pickle juice. Mix that altogether and then form out the little bites the size you want. They are dang tasty. So the bacon isn't crumbled up and inside of those?

Forgot to take any pics, but the pellet grill was busy today. For lunch. I cooked chicken wings and five 5 pepper sausages. Then for dinner I first cooked over a pound of bacon followed by a family pack of chicken breasts I cut into decent sized strips. After those were both done I put the chicken in a 9x13 casserole dish and cover the chicken with chunks of cream cheese, shredded cheddar, shredded mozzarella, and then topped it with crumbled bacon. I’m telling ya that dish was quite delightful. Everyone enjoyed it.

I've never cooked it beyond the 225deg when we smoke it. Ive been getting bad about picture when the food is ready and hungry mouths await. Lol

I baked in the oven at 375 and the cream cheese does melt out like the shredded, but everything stayed on top of the chicken. It didn’t melt down enough to run all over the pan. Just finished it off for lunch and man it was good.

With the 2023 Turkey season starting tomorrow I thought I would make a special dinner tonight since I probably will be busy hunting for a while.
THE MENU: Canada Goose leg/thighs slow cooked in a crock pot. I also added baby carrots, soar kraut, mushrooms, and apples. I seasoned it with Rosemary, salt and pepper and I put several heaping tablespoons of brown sugar in to sweeten the kraut. About 1/2 hour before it was done I added potato Gnocchi and some more cut up chunks of mushrooms.
The legs of a goose are by far the best part of the bird. I use the breasts for other recipes because they are so tough and need to be reduced in size in order to cook thoroughly.

Took my turkey from last week and spent ALL of it on making cream cheese/bacon/ pepper poppers for Tethrd employees coming into town. Still not smart enough to post a picture here but they were AMAZING coming out of the air fryer. It ended up taking longer to make than I thought (the turkey was done, however it didn't get the bacon all the way) but it was well worth the wait.
