PRESS RELEASE FROM THE ILLINOIS DNR... Thank you to everyone who tuned in this morning to help Illinois DNR celebrate COPI , the new brand name for Asian carp. Encouraging more human consumption of this delicious, healthful, flaky fish is just one part of Illinois DNR’s comprehensive effort to manage these fish in our waterways. Rebranding to COPI will help create interest and consumer demand, thereby reducing the ecological harm caused by high densities of invasive carps in our rivers. The more we remove through commercial fishing, the more successful we’ll be in helping our native fish thrive. The Brandon Road Lock and Dam barrier near Joliet is another equally important part of our strategy. By eating more COPI and reducing fish densities in the Illinois River, we'll reduce upstream pressure on the barrier systems, further reducing the risk that these fish may pass through into Lake Michigan. When I was in Grammar School, I did a Science Project on Muskrats. If you were eating a dish called Maryland Terrapin or Marsh Rabbit, you were eating Muskrat.

I think its a rebranding to get people to eat them, if they can create a commercial market for it then they can reduce the population. Nobody wants to eat carp, Asian or otherwise, but they're hoping Copi sounds better to a consumer. Should have picked a more alluring name though.

OK… Who all here has eaten carp? If you did what’s your verdict? What kind of carp? There are a few different kinds. 1) Common German Carp.
I have tried it both smoked and cooked. Maybe because it was the time of the year and the water was warm, but I didn't like it.
2) Buffalo. Technically not a carp, but pretty close. I have tried it smoked and it was good. Tried cooked, and while it was better than Common Carp, it still wasn't something that I'd consider to be "good". 3) Grass Carp or Triploid Grass Carp or White Amur While I haven't tried it, a friend and customer tried one that he caught in his pond. He said it was somewhat like filleting Northern Pike - dealing with the Y bones, but he cooked it on his grill and said it was the best fish he's ever eaten.

Have ate carp and sucker.. My grandmother use to can them and then fry up like salmon patties. If my memory serves me correctly tasted like salmon patties.

All caught in same body of water, all handled same and every person who tried the carp picked it out as yeah no thanks. It was not for us. Maybe others like it but I will use it to catch big cats or feed wildlife.

I have a friend that grew up in an outdoors family. They honestly did their best to catch, kill, and grow everything possible for consumption and purchase as little as possible. I remember him telling me that, if cooked properly, buffalo was some of the best fish to eat period. He also said that it was garden fertilizer otherwise.
Speaking of fertilizer, it seems there should be a way to process trash fish into organic fertilizer. Maybe I'm dumber than my wife and kids think, but seems logical to me. I had and uncle (RIP) that had six kids. They fished frequently solely for food. I went along a few times. I remember him getting out an old garden tractor with a single plow blade to cut a trench. He'd empty fish remains into the trench and run over it with a rigged up drag to cover it up. Free fertilizer.

Dad showed me how to catch carp and I would drag a stinger home through the neighbors yard. He would razz me for keeping the carp. I told him Dad wants all of them. He had no idea it was to be buried in the garden.

The only carp I have eaten was smoked. You could eat it but I wouldn't go as far to say it was good.
