Seeing as how it's Friday and me being the good Catholic alter boy I thought I would make a fish dish for supper.
I caught a nice mess of bluegills in December so today I made a Bluegill Pot Pie.
Simple to make: A cast iron skillet sprayed with non-stick then lined with a store bought pie crust and baked at 300 degrees for approx. 12 mins. I used about a pound of cut up fillets, a pound of frozen mixed vegetables thawed, a can of cream of celery soup (without water) along with Mrs. Dash seasoning and some dill weed and old bay seasoning for good measure.
Mix all the above together and pour into the baked crust then cover with another crust and bake it at 400 degrees for about 45-50 mins. or till the top crust is a light golden brown.
I have made this recipe with other white meat fish such as bass, perch, crappie.

Does the fish just flake apart to nothing?
Very interesting, never heard of using fish in a pie.
Could see a bigger and tougher chunk, but not a bluegill filet.

Thanks The fish pieces stay together. I cut an average bluegill fillet in half, I also mix all the ingredients in a bowl then pour it into the pan. The pie I made tonight I used regular mixed vegetables as well as a blend of broccoli and cauliflower.

A tip: when making the pie let the frozen vegetables thaw and drain well to rid of moisture also pat dry the fish. Do not add water to the canned soup, the pie will be moist but not runny.
