Didn’t do a deer but butchered a 901 lb hanging weight steer today My brother needed meat so he bought 1/2 I bought a 1/4 and his daughter got a 1/4 normally we take it in a have it done but the local meat markets are so backed up they won’t take anymore.
That ended up being a big problem for the guy we get our beef from he’s got about 40 head I’d say that he’s growing for people you put your name in and ones ready it’s yours.
He had a butcher area for his own and family use but was not set up as a butcher that could sell meat so now if you want one you have to at least be there while he does it and he sure hopes your helping as long as your on site he can get around the usda and inspection.
Ended up paying 3.25 a lb for the meat butchering plastic wrapping then paper wrapping grinding and all the bags for burger sure was some work but it sure looks like a good beef never really had a bad one from him

Glad you got it handled. What a raw deal. The avg person would be in trouble!
We butchered a few hogs before. I didnt care for it because we had only done deer prior. Like anything, if we did a couple more, no problem.

Guess not. It’s been that way since Covid got going good they can’t even keep up with the in store orders don’t know it for a fact but I heard 3 or more months to buy one and have them do it. They still buy cows and pigs from the same locals they always have but a custom butcher like ours were we got our beef from someone else they won’t touch it. I do know earlier this year they had talked about not doing any deer or only so many, I don’t know how many they do but it’s over easily over a thousand people come from miles away to have them do it. They only butcher deer one day a week is what I was told they have to tear down everything thing and do a deep clean so they don’t have cross contamination it’s a fairly big operation they have three semi refrigeration trailers that stay year round they put shelf’s in them and that’s were the deer get frozen and stored after butchering and they are packed full during deer season.

Some butchers last year had a waiting list that was a year long. I believe it I know another one in New Haven that does custom butchering they won’t take anything either. It’s put the hurt on a lot of local farmers around here that have guys like me that bought one every year they may of only had 20 or 30 cows but knew they had them sold. Even when I didn’t want one I still bought it and just sold it to someone at work or someone I knew I never had a issue finding someone one to take it. Biggest reason Don bought a lot of the butchering saws grinders wrapping they had some of it for themselves but not near good or big enough for doing it dang near every week he really didn’t have much choice he’d been stuck with 30 40 head of beef he couldn’t get rid of

Not sure how that market works but around here the butchering places only buy beef and hogs from the same farmers so they have some idea and control of quality of the meat and what its been eating how it was grown they are fairly strict on everything from start to finish and It shows they have good looking and tasting meat. That why I always get it from Don he also feeds and cares for his cows very well and is proud of what he produces for people

Not as delightful looking as some of the fine cuisine here, but nonetheless a true breakfast of champions. We got a 2 hr school delay, so made Luke and I deer and mushrooms with eggs. Cant beat an all natural high protein breakfast to start your day. 😛
