Once again thanks to sculver7 for recommending the NESCO vac/sealer.
Just like the pros.

Freeze the fillets first. Have you ever used paper towel I was told to do that instead of putting them in the freezer. Every thing wet I’ve always froze first

I have done the paper towel method. It does work. But you have to pat the fillets completely dry, or some juice can still migrate to the seal. The freezing method is definitely the way to go.
I ended up buying this same sealer after some research and correspondence this spring. So far very happy with the results as well.

Like deadeer said any moisture will find it's way into the seal and even though it appears sealed and you put it in your freezer you will find out in a day or so that that the bag filled with air.
I froze Morel mushrooms and then used the gentle vac setting when sealing them and they came out perfect.

Seal was not great and bags seemed expensive. I am up for another round if there is a good reccomendation.

I have used both Nesco and Food Saver can't say I see any difference.
Yes they are a bit expensive but so is wild caught game.

That’s the issue I always had started freezing about everything or at at least close seems to really help, Someone told me or I seen it about the paper towels.

They do cost a bit but I use my vac sealer for tons of stuff I’ll buy a big tenderloin when on sale split it up or when chicken Is on sale. Or when I smoke a butt more than I can eat so vacuum a couple bags. Something I really like is when you get a stick of summer sausage slice it and put 12 in a bag great for a snack or on the boat tons of uses outside of food.

I bought bags off Amazon last time. 200 quart bags and 100 gallon bags were $25 for each size. Heck of a deal imo.

Chamber vac seas bags won't work in a regular vac sealer and I am not sure that regular bags will work in a chamber sealer.
