This is about as quick and easy as it gets. And I think the fresh tomatoes plus chilling in the fridge overnight make the biggest difference. One lb of fresh Roma tomatoes (4-6 depending on the size) diced. 1/4 cup of diced red onion. Add this and the salsa pouch contents to a bowl and mix! Chill for at least 30 minutes. Overnight is better! You can get this online (Amazon), Wal-Mart, Kroger, etc. Concord sells a Hot mix, too.

I use Mrs. Wages pickle mix and like it. I found a decent canning recipe since asking. it's easy but a little time consuming.
5lbs. roma tomatoes. 3-4 jalapenos 1-1/2 chopped onion. 1 cup vinegar 3 cloves minced garlic. 2tsp aregano 1/4 cup cilantro loose packed 1/2 tsp ground cumin. 2 tbs salt 1_2 tbs sugar to taste.
simmer all ingredients for 10 minutes. Watergate in sterile jars and store.
