I thought I would experiment with making some goose breakfast sausage.
I started by grinding the breast of one Canada Goose, then I added an equal amount of ground pork shoulder that was mildly seasoned with garlic then my wife did her MAD SCIENTIST thing with her spices.
We cooked up a batch and then added a little bit more of certain spices for the desired flavor.
End result was 3 1/2 pounds of mind blowing excellent tasting GOOSE SAUSAGE.
