Yesterday my wife made some pasties with ground venison and ground pork. They're really good, but could use a sauce or gravy of some kind. First time I had heard of pasties was on a trip up north in Michigan. Just the name made me curious enough to try them. I was underimpressed but I’m sure slobbering on some good gravy would have helped.

Tried the mississippi pot roast recipe over the weekend on a deer roast, it was delicious!! Sorry, no pics and thanks to whitetail1 for the recipe tip!

Indiana wild game weekend.
Got some deer scraps thawing for grinding in the morning. The LEM ready for service. Make some more meatballs, burgers and chili meat.
Vegetable soup going for tomorrow afternoon.
Squirrels ready to fry and put in cream of celery to bake.
Maybe a bluegill/walleye fry Sunday.

We had a slow cooked deer and vegetable stew for supper tonight, tomorrow Blackened Walleye and on Sunday eggs in the basket with goose sausage.

Well its not deer but I did shoot it. When I was getting ready to grind up the frozen deer and my unfrozen deer I accidentally grabbed some packages that I thought were deer. It happen to be 3 packages of goose breasts. We usually slice it and fry it to get it tender enough to eat but since it was half thawed out I decided to grind it up. So I tried some out tonight. Just added some spices and fried it. Turned out really good. Recipe for duck/goose breakfast sausage Duck or Goose Breakfast Sausage Ingredients 2 cups skinless duck or goose breast fillets 1 cup boneless pork shoulder 1/4 teaspoon dried rosemary 1/4 teaspoon dried thyme 1/2 teaspoon dried sage 1 teaspoon whole mustard seeds 2 tablespoons butter 1/3 cup finely diced yellow onion 2 minced garlic cloves 1/4 cup orange juice Pinch cayenne pepper 1/2 teaspoon cracked black pepper 1 teaspoon kosher salt 1 egg Vegetable oil Photo © Holly Heyser Directions [Step 1] Cut duck or goose and pork into small chunks. Grind meat in a grinder or pulse in a food processor until pea-sized. Place ground meat into a large bowl. [STEP 2] Combine rosemary, thyme, sage, and mustard seeds. Lightly toast in a dry skillet over medium-low heat. [STEP 3] Heat butter in a skillet and sauté onion, toasted seasonings, and garlic until onion is translucent. Add orange juice and cook until liquid is reduced by half. Add cayenne pepper, black pepper, and salt. Remove from heat and allow to cool. Add mixture to bowl with ground meat. Add egg and mix thoroughly with your hands. Form meat into egg-sized balls and then press into patties. [STEP 4] Add enough oil to just coat the bottom of a skillet over medium heat. When oil is hot, add patties and sauté on each side until well-browned and cooked through.

25 pounds of deer burger ran through the LEM Big Bite Squirrels steamed for couple hours then fried. Into the oven with some cream of celery.

Fried up some cube steaks, sauteed onion, now in the crock pot with cream of celery soup. Now sauteeing more onion, and deveined jalapenos. Got a small brisket flat, rack of ribs, t-bone, and stuffed jalapenos to mess with rest of the weekend. Big storm coming, so outside chores are done, snow blower gassed up, generator ready. Saying anywhere from 6-12" snow, so gonna watch out the window! Ha!

The cubed steak turned out great. The stuffed jalapenos were boringly awesome. Now got the brisket flat on the smoker overnight. Heck of a weekend of stuffing our faces. Lol.
