My brothers place has a field about 15 acres of mostly sumac. Good number of covey are in that field and along the edges. Now there are coveys around the farm. Started about 10 years ago and numbers have been growing each year. Good to see. We aren't hunting them yet. Maybe in a year or two. I appreciate and admire your restraint in holding off on hunting those coveys, but life is short, tomorrow isn`t guaranteed. I wouldn`t over hunt them, but buddy, I`d be hunting them now!

I wonder if this is how some folks felt about the Passenger Pigeon.

Find a unique recipe and cook them with care because that will be the most unique meal you will ever eat. TIP: they are a dark meat bird DO NOT OVER COOK THEM leave them pink inside. I don't want to come off wrong on my first post BUT,,, quail isn't dark meat! IF it migrates its dark meat! quail is not a migratory bird. Enjoy those birds, GREAT table fare 2nd only to a properly cook duck breast.

I'm thinking of smoking them. Not quite sure yet but, that's what I'm leaning towards
