The local livestock processor requires the critters be brought to him alive. The deer processor ONLY does deer, nothing else. (well, maybe an elk or moose - I know they've done both) I have to ask them if the elk/moose was quartered or skinned!

If I drop one where it is safe to field dress it I will do it where it falls it only takes about 10 to 15 min. I have had them fall in the middle of the deer run & out of respect for the other hunters, I drug it out to the edge of the woods then dressed it out.

I made the mistake of not gutting one time quickly enough. I was gently trying to not get into the stomach, but I did and it literally exploded showering me in the face with stomach contents. Needless to say, I was puking my guts up for 5 minutes. I had to take a long, long shower before finishing the job. I could still smell that smell on me for days it seemed like. Pitched the jacket and shirt in the dumpster. I think my mouth was opened when it happened. My beard soaked up that smell, had to shave it off, or most of it anyway. My wife was not happy when I staggered into the house smelling like a gut wagon with puke and deer gut all over me. I can laugh about it now, but when it happened I didn't know if I was going to make it or not. That damned deer loved corn and plenty of it!!!

I always have cut a small slit between the rear legs enough that I can get two fingers in and pull the skin up from the guts and stick my knife in a start cutting up the belly pulling the skin away from the guts as I go up, usually without problems. I had problems that day.

I always have cut a small slit between the rear legs enough that I can get two fingers in and pull the skin up from the guts and stick my knife in a start cutting up the belly pulling the skin away from the guts as I go up, usually without problems. I had problems that day. I only gut with deer hanging now. A couple years ago a guy told me about gutting hanging head down. I thought it was crazy as I never heard of that. I tried it and now would never do another head up or on the ground. Works for me. Learn something new every day.

Yep, that's it, just a newer version, same difference. Note the plastic tip. Just start a small incision somewhere safe, then zip right thru as safe as can possibly be. I used the heck out of mine for years.

When the knife went in, steam came out with so much force it whistled. Soon as that steam hit my uncle, he immediately projectile vomited lol. Personally, I start at the sternum. Pinch some skin, make a slit, then use my gut hook to lift and pull at the same time. Hardest part for me is the pelvis. I never bring a saw or , even though I cuss and holler the whole time about how I wish I would bring a damned saw.

I use to take mine to a processor, but every time I went to pick up the meat it always seemed on the lighter side of what I took in. Have any of y'all ever had the same feeling or was the processor I was using just skimming me out of meat?

This will be controversial, but if you process yourself, expect 30% of clean meat after processing. So a 100# deer will yield 30# of red meat.

I hear guys at work say they got 60# out of a 100# deer. Idk, but if they did, they are eating a lot of garbage imo. To each their own, and I'm not questioning anything. Just saying from experience after butchering for 20 years at least.

I get ~45-50% of field dressed weight. To get this kind of yield you must leave some bone in and keep the ribs. I am closer to the 30% also. I always thought I yielded more but then I bought a good scale and was surprised at the lower number. It also takes me from skinning to cleaning up everything a good 4 hours which is why I am also always surprised when guys tell me they can do one in an hour.

My average is a little less than the 30%,but I’m very picky when I trim everything down too. That’s why I’ve always done it myself and not used a processor.
