I'm hearing beef/pork supplies are running low. Luckily, with the deal I have with my farmer who rents my ground, I get free beef and pork. Please consider this option. Even before the deal with my farmer,we have always bought in bulk. Most all local butcher/kill shops are booked until FEBRUARY! Go ahead and book part of a beef for as soon as they can do it. Prices will be roughly $500 per quarter. A quarter usually amounts to 130-160 pounds of processed meat. That equates to roughly $4.50ish per pound. Beef, properly wrapped, will keep 18 months at least in the freezer. Figure out after a couple times how much you need and how often. It's a win for everyone. No worries about meat, farmers have a local market and local butcher shops stay in business and we don't depend on"big business". Just something to think about.

I know Moody meats in Ladoga, as well as Ladoga Frozen foods butcher and you deal with them and they go through the farmer. In fact, I think Moody Farms has their own beef cattle?

You can go either way. If you go through a farmer, there is a possibility of getting in sooner, sometimes they book animals way ahead and sell them as they go. Either way is good.

Local shops here do both ways. The problem currently is all the local shops are booked through the end of 2020

I wonder if some of these shops that do deer also will even do them this year. I am sure the cows, pigs, lambs, goats etc are their big money makers.

One here I know is not, and a second was leaning towards not when we talk last fall. THAT would create an undue hardship on those of us who don`t have a place to cut our own deer. I`m very, very picky about who cuts my deer, because that`s a vitally, critically important piece of that puzzle of getting venison fot to put on your plate.

I have not purchased beef for my freezer at home for more than 35 years. Between hunting and the road-kill list, I generally put between 2 and 8 deer in my freezer every year. I usually give venison to family and friends, and then replace what I give away with fresh from the current season.
I also know someone who works in a pork packing plant. Just before the virus struck, I purchased 17 pounds of pork tenderloins and 30 pounds of bacon. Since my dogs can't get in the freezer (yet), and there are no other humans to consume it, my meat supply lasts quite a long time.
Throw in a squirrel here and there, a few bunnies now and again, and I really don't worry much if the meat shelves are sparse for the next year. Next season I want to add a turkey to the menu.

That will put the hurt on a lot of people who can't do their own deer. All the ones I know are full butcher shops and just do deer on the side.

I hope so those are the ones that stay open later. I saw a new one opened in Jefferson County last Nov.

Several things need to fall into place to have great tasting venison. Shot placement, a quick, clean kill. Knowing what you`re doing when field dressing. And a good, knowledgeable processor. The "mom and pop" places won`t have my trust, because even a lot of the bigger places that ought to know better, do stupid things when cutting deer, just to empty their coolers and get deer out the door.

Agree 100%. 95% of the pork and beef I have actually bought other than freezer meat has been from the local butcher or processor. I alway felt it was a huge mistake not supporting the locals. I don't know what retail permits and inspections would cost, but it is most definitely a money making venture.

Im leaving my price the same for deer processing. I have had over 50 calls easily in the last two months asking me to do hogs. I done a few for family and myself but thats it. I have killed several and hung in my cooler for other friend's but they process them. Even killed 15 a week ago for a butcher shop thats a half hour away and hung in my cooler a few days for them because their cooler was full. I killed a hamburger cow 1700lb, and split 3 ways with family. $0.65lb.
