I made Turkey and Noodles for a few guys at work today. I used all of the meat from a fall hen.
I pressure cooked the legs for 45 minutes in water, salt, pepper, onion, celery and carrots, then picked the meat and strained the broth. Sliced and lightly browned the breast in a skillet. Sautéed some more onions, carrots and celery. Put everything in a crock pot with a large can of cream of mushroom soup and the broth I made in the pressure cooker. Adjusted salt and pepper and added some thyme. Brought to work this AM and fired up the crock pot at 8 AM. Once hot I added a bag of frozen egg noodles and frozen peas (I put them in the microwave for a few minutes). The noodles took a little over an hour to cook. Served with some diced chilis. No complaints.

Last year I ground mine up to burger and wow. I was impressed. As a matter of fact, that’s happening again this year.

Forgot to add. We put a little bit of bacon fat into the mix so it would hold together better.

My wife is chinese and we are empty nesters, so I don't roast whole birds anymore. She likes me to cut into one pound fillets and vacuum seal. She thaws and slices into strips for spicy Sichuan stir fry with veggies. Very good.
