So, I primarily (99% of the time) fish for fun. Catch and release style. I've never actually filleted a fish. The ones I have kept out were to give to family and friends who were with me. Then we'd just join them from time to time for a fish fry.
My question is, how do you kill the fish between catching and filleting? Do you leave them on ice over night? Quick blow to the head before filleting? What's the best method?
My wife and I are going to do a little fishing at the ol' crappie and catfish hole but, we figured we better put some in the freezer when we go. I did purchase a fillet knife and cutting board as well.

I just fillet them straight from the livewell, stringer, or cooler. I don’t kill them first.

I usually just filled straight from my live well. Now my buddy takes them out of the live well and cuts the gill to bleed them out, puts them in a bucket of water and then fillets

I prefer to have fish either live or well chilled when cleaning. I am not much of a germophobe, but am paranoid about fish, pork, and poultry handling. I suggest learning hands-on from someone with experience. Get a quality, sharp electric knife. I just ordered a new set of blades for my Mr Twister knife. It costs around $30 new and the original blades lasted five years.

Once I bought and used my mister twister electric fillet knife I have never looked back. So much quicker and easier.

My friend Steve walks them on the head I just cut head of and go at it but I’m doing mostly eyes and perch and pike not pan fish
I use a 12 inch Rapala knife never tried a electric knife

If you catch a fish that you intend to eat, the best thing to do is immediately throw it in a cooler of ice. No need to kill, it will flop around a couple times, then the cold will calm him down. The meat stays much better and they clean easier if chilled.

I used a rechargeable Rapala for years, this winter we bought a bubba rechargeable and WOW what a nice knife. I clean them alive, dead whatever. Ill sometimes bleed when ice fishing, could never get myself to clean or eat those white floaters...LOL

Long last charge times, 2 batts, sharp blades, etc. His brother uses a Rapala, and his son a Bass Pro model, and they both say they will get one too when time to move on. He is a very skeptical person, and to please him at the price says something!

I agree with steiny ice is best option but not always an option. Depends on the day I guess. If the fish are alive when I get home I will bleed them in my sink (outdoors). If they are dead or I am in a hurry I fillet immediately.
My Dad told me if the gills have any pink they are good. Once they turn white he would toss them. I fillet them now and use my judgment based on texture.
I have never used an electric knife but I dont pan fish much any more. If I had to fillet 20 fish to get a meal those would pay off. I just dont see the need for the fish I typically fillet.

For that price it better about fillet them by itself. I've burned up 3 of the old mr twisters..LOL. Would get so hot I couldnt hold them. We use ours enough to justify.
