Well was finally brave enough to fork out the money for a full brisket. Meijer had them on sale for 3.99 a pound. Here’s the one I bought: Started the smoke last night around 10:00. Started at 225 degrees for about two hours. Turned it down to 180 degrees when I went to bed around midnight. Got up and it was right around 168. I wrapped it heavy in foil and pushed temp up to 250 degrees. It hit 205 a couple hours later. Put it in the cooler and let it rest for a little more than 8 hours. Took it out and cut it up when everyone else got home at 5:30. I can’t complain at all for my first try. Passed all tenderness, bend, juicy, and pull tests and tasted delicious. I’ll definitely be doing one again.

No pic, same old stuff...
Made some thick cut bacon on Big Z. Yummy!
Then got around to making a pork butt that came out fantastic. I used a sriracha rub, and the "bark had bite". Lol.
My new found energy and stamina sure has me busy nowadays. Constantly on the go and always something to keep busy with. Where food was a huge part of what I thought about every day, is now a minuscule period in my day planning.

I will say deadeer was right about cooking bacon on this grill. It does an amazing job and there’s no mess in the house or to clean up. My daughter requested some bacon today. It’s becoming an every Sunday thing.

It’s becoming an every Sunday thing. You ever try making bacon takes a bit of time and work but I like it I’ve bought pork loin used bacon cure and made Canadian bacon

I’ve thought about it, but never got any further than the thinking part. It’s not hard but does take a bit of time and a slicer for a constant thickness I do more of the Canadian bacon pork belly doesn’t really come on sale much normally I order one from the local meat market

Smoked catfish I’ll admit not a big fan of catfish buddy gave me some sure wasn’t going to turn down his generosity About 1 gallon cold water 1/2 cup brown sugar 1/2 cup salt 1/2 cup Worcestershire 3 or 4 cloves of garlic diced 1 onion diced 2 Jalapeños diced Soaked three hours put on rack to dry sprinkled with a cajun seasoning Smoked for 2.5 hours with peach wood

Going on Chicken breast sliced dead center filled with sliced sharp cheddar and shaved ham seasoned closed wrapped in bacon with more seasoning. Smoked with peach and apple wood Photos in a few hours

Heck yeah. Busy smoker today for you. How is the catfish? Never smoked any. Always been fried, but need to find other ways to eat it now. Smoked or air fryer will probably be it for me.

First time for me also Not bad at all a bit moist but nice and flaky I did put some kick in it got a nice taste with just a touch of heat. I do like smoking with fruit wood it’s more mellow and doesn’t give you that stronger bite like Mesquite or Hickory does. I took the day off from working on my home got burned out on it so I spent most of the day prepping and smoking that and it’s a nice day to just sit in the garage and watch the world go by

I got a couple cream cheese blocks smoking now. In a bit I'll put on a ribeye and chops my wife likes. My new favorite way is to almost finish the steaks on Big Z, then a quick sear in a white hot cast iron skillet with bacon grease to put a crisp crunch on them. Super tasty this way.

I lost 61#, then put 14# back on in 2 months since I started lifting weights again. My shape and physique are improving greatly. Shirt and pants still getting looser. Vitals are great. My body has really responded since going to carnivore.
