Smoked some chicken breasts and then diced them for a new white chili recipe I found. Absolutely delicious! Even our picky oldest daughter went back for seconds.

Just put in a order for summer sausage supplies, going to try my hand at venison summer sausage. I will start with small batches with different cheese and flavor combinations. I really like deer summer sausage just don’t like the idea of everyone’s deer mixed up with mine.

I really like deer summer sausage just don’t like the idea of everyone’s deer mixed up with mine. Here's some unsolicited advice: Use 2x the recommended cheese amount, or don't use any at all. Use 20% pork fat, or 25% pork butt. Mix the sausage and let it sit overnight before cooking. Use hog rings to secure the casings, not the strings that probably came with the kit. Use an old broomstick, or similar pole, to hang the sticks from to cool. Poke a hole in the bottom of the sticks to let water and grease drain. Don't forget to add the cheese and pork weight into the amount of finished product. If you have success and want to take it up a notch, invest in a true sausage stuffer. Stuffing from the end of a grinder is not fun for larger batches.

I smoked one of those marinated Smithfield pork loins today. Been using the same method on most stuff lately. Smoke till 140deg, then wrap or put in covered dish until desired temp. I drizzled some honey and maple syrup on it before wrapping. When I got it out, the juice was to the top. Awesome! I could only taste a sweet texture, but that was it. Luke said it was the best and devoured it and wife had a few pieces. They can taste but not smell, I cant do either, but can differentiate flavors somewhat. I could feel cayenne pepper in my throat today when I made tacos. Lol.

Still zero smell. I stuck my nose in vinegar and bleach jugs, nuttin! I am still feeling great, so hoping the vaccine keeps me upright. My wife is still miserable tho.

When I had it a year ago not being able to smell and taste were my worst symptoms. Just felt like I had a head cold. I am hoping that will be your case.

Not being able to taste beer sucked! Right! How long did the loss of taste last? I havent been drinking much lately anyway. I got a case and a pint of Fireball for the vacation, and their not getting any love now. Lol. If I make it thru this unscathed, I still got the 1st week of mz off so gonna work on it then. 😎

I'll smoking the turkey this year. Getting stuff ready this weekend. Using the big Oklahoma Joe traditional smoker. Takes more babysitting, but produces some great tasting food.

Took me about 4 months to get it back. You went 4 months and could not taste beer man that just sucks I swear I had it before it was widespread and well known but my taste and smell was only a few weeks sicker than crap hacking all day and night bad fever don’t know never went to doc or got tested not sure they even had a test at that time

Never done one personally, but know several buddies that do. Surely you could use whatever you wanted. Never heard them say anything different, so I would presume 100% its plane old standard bologna. A garlic bologna or pickled loaf my be interesting as well. Good luck and report back.

Hey gang! Was thinking of smoking a bologna roll for Christmas with my side of the family. Had anyone ever tried this and do you use regular or getman bologna? We do it all the time. Regular. Score it, rub with yellow mustard, and then rub with your favorite rub. Smoke for 5 hours or so
