Today I took 1/2 of last years wild turkey breast and created a culinary delight.
I began by wilting about a pound of fresh spinach in a frying pan with olive oil,butter and fresh ground garlic,as I was doing that I cut the turkey breast almost in 2 running lengthwise. I stuffed the breast with the fresh wilted spinach along with some fresh Feta cheese then closed and tied the breast up, I then wrapped the breast with bacon and pinned it.
This went in the oven at 350 for about 1 hour and 15 minutes.
While the breast was cooking I sauteed in butter some of last falls HONEY MUSHROOMS.
I also cooked up some Polish Perogies in butter and onions.
As the meat was just about done I put the broiler on and crispened the bacon then I removed it from the oven and let it rest tented while I made a several poached eggs.
This was served with fresh orange juice and coffee.
