Got the summer sausage on the smoker but I’d say this tub of snack sticks is going on tomorrow 40 lbs was just a bit much for one day for me

Made #85 of salami and summer sausage with two buddies today. One guy bought a jalapeno kit and added ghost pepper cheese. Not sure if I even want to try that one. We cooked most of it in an old beer keg and hot water. Nothing wrong with that method whatsoever. I'll be smoking my batch tomorrow with hickory and cherry chips. The weather is cold and windy here. Should be a good low and long smoke. Plenty of extra venison and pork. I'm going to make some bacon and let it sit until next weekend and then smoke it.

No deer meat, but I’ll be putting three racks of ribs on the smoker later tomorrow morning. I really need to try to make my own deer sausage.

Something I like to do is cut up my summer sausage and than put 15 in a bag and vacuum it. It’s nice you can pull some out of the freezer but don’t have to eat a whole stick it’s also great to take on the boat when fishing or ice fishing camping or just to eat watching tv

Photos of ribs 😀 You should try to make your own snack sticks or summer sausage all you need is a grinder stuffer and smoker it is very easy just takes a lot of time but than again anything smoked takes some time Lem has nice kits butcher packer are good plus a ton of other places have them for sale no guessing just add the required meat weight and go

I just pay to have SS or salami made, and wish they could at least pack in half logs or less.

I just pay to have SS or salami made, and wish they could at least pack in half logs or less. You can get a cheep slicer for 80 to 120 bucks they work just take longer nice to have around for cheese or buying bulk meat I can’t hardly live with out my vacuum packer use it for all kinds of stuff a must have for anyone if you ask me

Got two racks with a bbq rub and one rack with garlic siracha. gif hostingLooking good did you boil them first I know some guys do to cut time I just put mine on about 130 for a few hours than crank it up to 150 for a few than 170 to finish always seem to fall off the bone

No boiling beforehand. About 6 hours later and here is the finished product. Tried something different and put some honey on the top of them for the last hour. Gonna see how that tastes here in just a bit.

It most certainly tasted pretty dang good. The garlic siracha was by far my favorite. None of that rack left, but do have enough left for a couple lunches this week.
