I was butchering my dad's buck and found a huge infection in a back leg. It's about the diameter of an orange and runs all the way up the hamstring area. I'm obviously throwing out this leg but I don't know what to do with the rest of the meat. I already have the back straps cut up and in the freezer. I wasn't there when he killed it but he said it looked kind of skinny like the spine was showing more than it would on a normal deer. He didn't know about the infection. It wasn't visible until I cut into the meat. So my question is, should I toss the rest of the meat or do you think it will still be good?

Personally I couldn’t eat it knowing that was in there. A small area yes but not infection that large and spreading. By his account of the deer it sounds like it was effecting the deers health overall.

I shot a buck several years ago with a similar affliction. He had evidently broken his front leg at the knee. It was badly swollen, and looked almost identical to yours.
My buddy the butcher told me to remove the affected leg and save the rest. I did as he suggested and had no issues at all. Meat tasted like every other deer I've ever harvested, and no-one got sick eating it.
Mine had that ball of puss... whatever, looked almost exactly like what you've pictured. The affected area was grapefruit size, or slightly larger. I did notice him limping slightly, but didn't notice the knee until he was down.

I realized the back straps that I broiled and at last night came from this deer. I didn't even think about it until I got the leftovers out for lunch. So far I'm feeling fine. I'm going to toss the rest of the meat out. I opened the leg up and it was worse than I thought. A nurse said it could be a MRSA type infection after seeing the pictures I posted on FB. I'm not going to risk it. Pretty much the entire inside of the hind quarter was infected.

I have never seen one that bad. Contact a CO and they “might” allow him to shoot another deer? Worth a try.

He can still shoot does on landowner exemption. I was gone when he shot this one and nobody else was around to help him. He had to quarter it up and haul it out a piece at a time up a steep hill. I hate that all his work was for nothing.

I think I’d toss that myself took a doe few years ago that had a bad front leg from a gunshot or bow but either way it was nasty cut it off and the rest was fine but that seems to be all throughout the meat

I killed one a few years back and when I started to skin it one of the back legs was nothing but puss. I left it for the coyotes. Another I shot was limping, a big 10 point, and when I recovered him his front leg smelled rotten like decaying flesh. Someone had shot him with a slug and hit his front leg but he kept on trucking. Shot him during muzzleloader season. Kept the back meat but threw out the front.
