After reading a lot of positive reviews I ordered some Legg's #10 sausage seasoning mix, ground up a bunch of pork butt, and whipped up some breakfast sausage.
Each pack is supposed to season 25 lbs. of meat- a bit much for the wife & I, so I got out the calculator, finally settled on 4 teaspoons of Legg's per lb., plus 1 teaspoon of cayenne and 1 tablespoon of brown sugar.
After giving it a try, and after getting the wifey's nod of approval, I mixed up another 8 lbs.
I will definitely be making more of this in the future; will tweak some for pizzas etc.. I highly recommend it for anyone who cares to make their own sausage.
