I don’t eat much of them myself lot people that I know or work with buy a whole cow and they always give me the heart tongue and few give me the liver now that I could eat a lot of.
I’ll eat about anything once some of it only took one bite to know never again but I’ll try it

Do you realize how many times that cow turned around and licked it's butt with that tongue your cooking up to eat?? LOL That's what my dear old Papaw used to say on the matter of eating cows tongue. I have never tried it. LOL. The outer layer is stripped off and tossed anyway. That argument doesn't fly with me. Almost no one objects to ham do they? My brother-in-law used to say "Today the tongue, tomorrow the dung." Dad always boiled it in a mixture of pickleing spice and vinegar. Boiled it until the skin could be peeled easy. We ate a little warm on sandwiches then it was sliced for cold meat sandwich meat. It is hard to find around here and expensive. It is a very tender cut of meat. Might smoke well.

One of my favorite cuts. Used to be cheap. If anyone gets a half or half a half I’ll gladly take your tongues.
