A friend of mine used to eat them. He would fry them with the rest of the squirrel. He used a nut cracket to bust the skull to get to the brain. He also ate the tongue.
He offered one to me but I politely turned him down..

I ate so many I quit head shots,I liked them so well ..And Woody the tongue was second to only the cheeks .I just cracked them with my teeth to get to the brains ðŸ§

One of my uncles wouldn't allow his son or I to use rifles when we all went squirrel hunting, because he wanted to have the heads intact when they were cleaned. He always claimed the heads as his own portion. He would probably have been completely willing to share, but none of the rest of us objected to his having them all. I did eat one fried brain he offered, and found it to be OK, but wasn't as fond of it as I was of the legs.
When he died several years back, I hadn't yet heard of the association of eating squirrel brains to CJD. but couldn't help wondering when I did if that was actually the cause of his death. I asked my cousins about his symptoms and they said there was none of the intense itching that is one of the signs often seen in CJD, or so we had both read. The docs called it Alzheimer's, which has very similar symptoms and could only be diagnosed with certainty by post-mortem examination of the brain, and none was done.
We did enjoy "mountain oysters" about every month for a few years when one of the other toolmakers in our toolroom had a part-time job as bouncer in a popular local bar that had a "Hogs Nuts Thursday" special, and he'd bring in a couple dozen leftovers to share with friends. Pretty good when re-heated in the break area micro-waves.
