I wasn`t sure if this could go in the Deer Hunting thread, but figured the Butchering area would be more suitable.
In order to get a deer to the processor I want to use, the possibility exists that I may have to find somewhere to hang it overnight, or even possibly just leave it in the bed of my truck overnight to get to the processor in the morning. What temperatures would be suitable to hang a deer overnight, or allow it to lay in the bed of a pickup for 10-12 hours, without spoilage beginning?

It`s going to be a challenge to get any deer I kill to the processor I want, but it`s really important to me, because I really enjoy properly butchered venison. This last guy who cut my buck while it was in rigor really angered me. I thought it was deer processing 101 that you don`t cut an animal in rigor.

I found this from an old Field and Stream article posted online from 2006:
First, the muscles go into rigor mortis, a stiffening lasting at most 24 hours. Butchering a deer during rigor mortis is one of the worst things you can do. It can cause a phenomenon called shortening, where the muscles contract and remain tougher than if butchering took place a day later.
Proper aging begins as soon as rigor mortis ends
I`ve been told different things about the timing of how soon rigor mortis ends. i`ve heard everything from 24 to as much as 72 hours, and I have zero idea what the actual time frame is. I would really think it shouldn`t be much more than 48 hours at most, but again, there`s differing information out there.
I just hope it works out I can get my next deer to the processor I like, then hopefully won`t have to deal with these issues.

If you kill a deer tonight, you field dress it,wash it out real good with cold water put a couple bags of ice in it and if its warm maybe a couple on it you will be fine till morning. By the time you get it to a processor it will be 8 or more hours after death and if it hangs a day or so your good to go. As said earlier it all starts with a quick clean kill and a fast field dressing.
