I want to take out the vines choking the timber on my buddies 70. Are there any I should not cut such as grape on low dollar timber? What are the trees I should liberate first? Is winter till green up the best time to take on this project?

Depends on the objective.
Grape is good for wildlife but if you want timber it should be controlled.
I just hack out a 3 in section and paint glyphosate on the stump section. I left 10% of the grape vines on the oaks that were short and lots of limbs. Cut it off good timber types with long clear trunks first and worked down from there. Not that I plan to harvest trees just didn't want them ruined.
Honey suckle and autum olive are bigger treats and hard to control

Non native Kudzu vine should be removed. Invasive like the Asian honey suckle.

Cut all of them you come across, you'll never put a big dent in it anyway.
