I'll consider it lol. We may need to start a coyote recipe thread if all goes well lol I really don't consider it a waste to let the other critters eat it. The vultures have done a great job on my opossums; I appreciate those vultures. I use the coons for bait. Cutting them up, it didn't look like it would be too bad to eat, especially BBQ. Look at what a chicken will eat, and they taste good!

I've eaten and enjoyed goundhog, coon, rattlesnake, alligator, turtle, crawdad, ants, spiders, and oysters.
Also enjoyed a thin chowder made with spring-caught carp that may have been the best fish I ever had.
Ate a great many chickens when I was growing up on the farm after watching them follow the cow around the barnyard scavenging the undigested corn kernels from her droppings.
Haven't yet had the opportunity to try coyote, but look forward to it if the chance arises. I have read that the hams and backstraps are about the only parts worth keeping for the table, as most everything else is very thin and tends to be stringy. The native residents considered their dogs to be delicacies when the winter meat supply was getting low or they had distinguished visitors in camp, so I would guess that they are very edible when prepared properly.
Heck, they're made out of meat!
Haven't yet tried possum, either, but may sometime soon.

I remember reading an article many years ago that was written by an old (relative term) mountain man type. He said that he had eaten most every kind of critter over his lifetime, but he never could bring himself to eat a coyote. According to him it was about the nastiest thing that he had ever tasted.

My newest thought is why do bears taste good? They'll eat basically anything and are almost a scavenger. Coyotes are as well. So technically they should taste good

So technically they should taste good Look at what a chicken eats, and they taste great. When I was a kid, we would throw the fish guts in the chicken pen; they gobbled it up. It never stopped me from eating them.

So technically they should taste good Pretty simple, but complicated both are omnivores but the bear leans towards plants while coyotes lean more towards meat. At least that's the rhetoric I'm spitting today.

It's probably more genetic than what they eat; however, I sure do like corn fed beef.

I ain't putting anything that smells that bad when I'm skinny it in my mouth. Period. Muskrat ain't bad. A little greasy, but tastes a lot like squirrel.

I've eaten dog (raw) dipped to two liquid spicy dishes. So I would try coyote, but not raw. I too, have eaten everything you can think being in Japan, South Korea, and Taiwan over the years.
