I just read where someone made the comment that they wouldn't have eaten the goose if they hadn't shot it. It got me to thinking about how we fix our ducks/geese.
We cut the breast into slightly bigger than bite size pieces and marinate them in "Game Tame". Don't know where you can buy the stuff other than Buy Low. Then we wrap bacon around them and put them on the grill for a few minutes. Can't hardly tell the difference between them and doves.
I used to give them away, now we take turns taking them all home.

That was me and I do cook them on the grill rare but that is the only way I have found them to be any good. Sometimes I worry about getting sick by not cooking them long enough.

I make my geese into jerky- very good. My recipe... equal parts brown sugar and koshur salt. stir into enough water to cover strips of meat. Add cajun spices until you can't stand it. also garlic powder, hot sauce- no specific choice, cayenne pepper, black pepper, some times barbeque sauce, stir and taste a few times until you like the taste of the mixture. Then add the goose meat cut into strips. soak over night and put in smoker or dehydrator. I personally prefer the smoker for making jerky. Duck.... cut off heat and tail- get rid of guts. Wash out cavity making sure it is clean. Then while still wet cover outside with cajun shake. set beer can or soup can on grill half full of apple cider. cook until outside is crispy brown. Very tasty! My son and I also will breat out ducks, and slide meat on a sharpened stick. While the fire burns down to cooking coals, we shake on various seasonings such as cajun, barbeque rub, garlic pepper, or the like..... then sit back and talk while the meat cooks. It may be the company, but we enjoy the taste. When all else fails ... wrap a strip of meat around a slice of jalpeno pepper, wrap with bacon and grill.

Your favorite jerky recipe usually makes it disappear pretty quick. A goose or duck fajita night is always a house pleaser. If you use fajita seasoning packets, don't put water in like the directions say. Use the juice of two limes, and put in some fresh cilantro when the meat and vegetables are done. It'll eat.
