Got my first deer of the season processed, vac sealed and in the freezer this evening. Hung for a week in the walk in at 38 degrees, left the back straps whole, steaks out of the hind quarters, and ground the rest for plain burger with no fat added.
Ate one backstrap, the catfish loins, and heart the day of kill. Good to have one put up. Time to get a couple more.
Best red meat on the planet, and good for you too.
