I use an oven thermometer that cost 2-3.00 from walmart. it hangs on the front of the rack and easy to read. the internal thermometers are the best and cost about 15.00 or so. once the internal temp hits 165 there done. h.h.

I tried one of those hi-mountain sausage kits and did not care for it either... I never tried another kit... I just get good recipes from guys who know what they are doing... Kind of like the guys that hang out on this site...Go figure... I never tried cheese, but I think I will this summer...Good idea...Hmmm...
