Ummmmm....I don't see the difference between pork fat and bacon. Isn't bacon pretty much pork fat?? ;D We eat Turkey bacon in my house, not quite the same taste, but hopefully I can keep the docs knife away from my chest for a while.

I always use 1lb of pork fat for 6lbs of venison. I then use a commercial seasoning (your choice) to make a batch of breakfast sausage. Bacon sounds even better and it will be in my next batch. The only problem with making 7lbs of sausage at a time is my friends usually take over half of it after they try it.
