OK the boar I just brought home seemed to have a bit of wild smell to him...once I got the meat in the house though I didn't notice it so much but am still soaking the whole batch in a cooler full of salted ice water that I cut up dozen lemons into....figured that wasn't too much different than the sour oranges some of you have used from down Florida way?
One of the guys on this hunt told me I needed to try the sausage seasoning from Marion Kay Seasonings (located on the west side of Brownstown)....have any of you ever used this?? They've got a website that stuff can be ordered from but would like some input from anyone that maybe has used any of their seasonings.
I've been using Morton's Sausage Seasoning but it seems to have more sage in it than I really like.

Lemons should work the same but the boys down south dont use salt in the water. Most of your seasonings come with salt in them so be careful you dont end up with too salty meat. h.h.

I didn't put but maybe a couple tablespoons in the water-the ice was pretty froze and I was just trying to get melted a bit-this is in a 120 qt cooler that's close to full so I doubt it could even be tasted.....IF one would want too
