First time trying to smoke a whole bird. So skin on or off? Smoked plenty of whole chickens with skin on, seems to make the taste better. Friend told me for Pheasant it better to have the skin off. Last year crop we only took the breast meat.

never have smoked a pheas. but dont see why it would be any diffrent then chick or turkey i have always kept skin on the chicks/turks when smoking chickn breats i had to watch carefully as to not dry them out so in my opinion keep skin on the pheas!!!

If you can get one plucked with the skin on I would say that would be best. I never dip them, and always manage to rip the skin off with the feathers.

I hate plucking feathers and dipping them in warm water ... yikes the smell. I remember when my Grandma use to make me pluck chickens back in the day. I guess I am going to wimp out and have them processed for an additional fee.
