My Oh my Oh My! This was first attempt at making these delectable treats. I'd never heard of them until bowbo posted a picture of some last year. These came out excellent. I have some Pepper Jack Cheese in with them too. These will never hit the freezer. My wife doesn't eat venison but she eating these!

Those look excellent! I'm sure the pepper jack cheese gives them a nice "bite". Those would probably be gone in minutes if that if they were brought to the HI get-together...

Good luck! Ive been making venison summer sausage for several years now and you will make a few mistakes at first but keep at it and soon you will get a product thats just as good as the one that comes from the butcher shop. h.h.

We did 10lbs. of chubs and 10lbs. of snack sticks this week end and they turend out great,just took a little longer than i thought it would take but i learend alot.But it was worth the effort.Will be doing more soon, thank for all the tips from everyone here.I will try to post some pictures as soon as i get some help ;D

Did you cook them in the oven or outside? I was going to make some but changed my mind as cold as it was outside. My smoker struggles is real cold weather. How'd you go about it all?

I cooked them in a gas smoker inside a semi heated building,im thinking thats why it took so long.I used 1 1-2x 12 casings and it still took 12 hours,i just layed them on the racks and used the water pan,it seems like when they reached 150 degrees they just held there for about 3 hours then began to increase to 160 fairly quick.made for a long day. i might wait for a wamer day next time.

Sounds like you went about it right. I take mine off about 152 - 154 degrees. Some say cook to 165 and I've seen 180. Mine come out great and i ain't got sick yet LOL

I took some of the meaty treats to work today and needless io say they disappeard quickly,so i must have done something right.I have to say they are almost to good to share.Again thanks to all on this site for shareing their knowledge about makeing sausage.So now that im an expert someone ask me something ;D ;D

Got them done yesterday and they turned out great again.i think i got this process down,and really enjoy doing it. so if you have been thinking about doing these meaty treats, dont put it off any longer,just dive right in its really quite easy.

It takes me longer to clean up the dishes afterwards than anything else.

You can practice using beef to get the hang of it,then when the venison is on the ground youll be ready.
